Cheese Fondue

200 g mushrooms
3 dl water (300ml)
½ bouillon cube
50 g flour
50 g butter
100 g aged or stronger type cheese – cubed
200 g mild or med, cheese – cubed
100 g ham – diced
Sprinkle of salt and pepper

Boil water and bouillon cube
Add chopped mushrooms and blanch for approximately 3 min.
Remove mushrooms from bouillon
In another pan:  Melt butter, add flour. Stir well and add bouillon a little at a time.  Add cheese and stir constantly.
Add ham and season with salt and pepper as needed. We added the mushrooms back in and used them too.



Cheesy Meatloaf

1 lb ground beef
1 egg
¾ cup milk
1 cup of your favourite Smits’ Farm Cheese shredded
1 ½ cups quick‐cooking oats
½ cup finely chopped onion
1tsp salt
Pepper, to taste

2/3 cup ketchup
½ cup brown sugar
1 ½ tsp mustard
Preheat oven to 350degrees. Combine all ingredients, except sauce, and spread evenly into a 9x9 greased pan. Mix sauce ingredients and spoon over the top. Bake for 45min to an hour.
Tastes even better the next day, sliced cold on a sandwich with mayo & fresh lettuce!


Braised carrots with bacon and onion topped with Smits & Co.w Cheese

Recipe for 4-6 people:
6-8 carrots, cut into slices and 1 small onion, diced
6 slices of bacon, fried and crumbled
¼ cup heavy cream
½ tsp nutmeg
¼ tsp sea salt
¼ tsp pepper
½ cup shredded gouda cheese
Boil the carrots until crisp-tender.  Melt a teaspoon of butter in frying pan add carrots, onion, bacon, cream and spices. Cook and stir constantly 8-10 mins. Place into a casserole dish and sprinkle with Smits & Co.w Cheese. Place in oven and broil to melt cheese. Enjoy!
